Without doing the research from what I remember you'd just need to get the correct Flux core wire depending on what metals you are working on.

Yeah most houses do but you'd need a new circuit put in the garage for it to work. 240 is nice because it allows you to tackle much bigger projects, but IMO by the time you get to that point a traditional MIG would be a better choice. My dad has a cool Miller welder which accepts 110v and 240 depending on what you are doing. 99% of the time he just plugs into the 110v.

My 240 is in the garage. My washer and dryer are in the garage.

The other unit is older tech and will likely show in the weld quality. I also wouldn't flux core weld stainless. 110V will cover most all of your needs well.

You can weld stainless with mig. It's not as pretty or an optimum solution but it can be done.
I would never go with a flux core only option. I might be spoiled but for a little more money you can get a much better weld.

We recently picked up another welder at the shop (tend to burn them up every 5 years or so when they're on nearly 60 hours a week. That probably actually weld 15-20 hours a week with no respect for duty cycles)
MP 140 iirc. Lincoln multi process. It'll do mig, stick, and DC tig (steel. Aluminum needs AC) problem is it's still in the box as we haven't needed it yet. Based on my experience with Lincoln machines I'll be great. I definitely prefer the red over the blue.

Can you recommend a good home one, that can be had for a few hundred at most?

A few years ago I picked up a Lincoln sp135+ used for 550. It's a great welder. I'd sell it for the same.

If I had to do it again I would just pony up the scratch for a new one. I think the mp140 we just picked up was 850 and came with an auto helmet as a promo.
